- 1/4 cup extra virgin olive oil
- 1 shallot, chopped
- 4 cloves garlic, chopped
- 2 teaspoons dried oregano
- 1 teaspoon chipotle chili powder
- 1 teaspoon honey
- 1–3 tablespoons harissa sauce (or use hot sauce)
- 1 tablespoon lemon zest
- salt and black pepper
- 1 1/2 pounds chicken breasts, cut into bite-size chunks
- 1–2 cups Tzatziki sauce
- 1/2 cup garlic tahini (recipe in notes)
Feta Fries
- 4 russet potatoes, cut into 1/4-inch-thick matchsticks
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 cup mixed herbs – dill, basil, parsley
- 1 teaspoon lemon zest
- 1 clove garlic, grated
- 2 tablespoons toasted sesame seeds
- 1/2 cup crumbled feta cheese
Instructions
- Marinate the Chicken: Mix olive oil, shallot, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add chicken, cover, and refrigerate for at least 1 hour.
- Prepare Feta Fries: Toss potatoes with olive oil, garlic powder, cayenne, herbs, lemon zest, garlic, and sesame seeds. Bake until crispy, then top with feta.
- Skewer and Grill: Thread marinated chicken onto skewers and grill until cooked through. Serve with tzatziki sauce and feta fries.
Notes
- You can make your own garlic tahini by blending tahini with garlic, lemon juice, and salt.
