For the Chicken Filling:
- 1 lb boneless, skinless chicken breast, thinly sliced

- 2 tablespoons olive oil
For the Vegetables:
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 1 medium red bell pepper, thinly sliced
For the Sandwich:
- 4 hoagie rolls, sliced open
- 8 slices provolone or American cheese
- 2 tablespoons unsalted butter, softened
Instructions
- Season the chicken: In a bowl, combine garlic powder, onion powder, smoked paprika, salt, and pepper. Toss chicken slices in the seasoning mix.
- Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook until no longer pink, about 5-7 minutes. Remove from skillet and set aside.
- Saute the vegetables: In the same skillet, add onion and bell peppers. Cook until softened, about 5 minutes.
- Assemble the sandwich: On each hoagie roll, layer chicken, sauteed vegetables, and cheese slices. Spread butter on the outside of the rolls.
- Grill the sandwich: Heat a panini press or skillet over medium heat. Place sandwiches in the press or skillet and cook until the bread is crispy and the cheese is melted, about 5 minutes per side.
- Serve: Cut the sandwiches in half and serve hot.
