Ingredients
– 1 tablespoon oil
– 2 boneless skinless chicken breasts (about 1 lb) cubed
– 1 teaspoon seasoning salt
– 1/4 teaspoon garlic powder
– 3 cloves garlic (finely minced)
– 1 teaspoon Italian seasoning
– 1/2 teaspoon salt
– 1/8-1/4 teaspoon red pepper flakes (depending on your tastes)
– 2 1/2 cups low sodium chicken broth
– 400 grams uncooked penne pasta (14 oz or 4 slightly heaped cups)
– 650 ml tomato marinara sauce (2 1/2 cups)
– 2 cups shredded mozzarella cheese
– 1/4 cup Panko bread crumbs
– 1/4 cup shredded Parmesan cheese
– 1 tablespoon oil
Instructions
1. In a large skillet, heat oil over medium heat. Add chicken cubes and season with seasoning salt, garlic powder, Italian seasoning, salt, and red pepper flakes. Cook until chicken is browned.
2. Add minced garlic and cook for another minute. Pour in chicken broth, penne pasta, and marinara sauce. Bring to a boil, then reduce heat and simmer for about 15-20 minutes or until pasta is cooked through.
3. Stir in mozzarella cheese until melted. In a separate small bowl, combine Panko bread crumbs and Parmesan cheese. Sprinkle mixture over the pasta.
4. Drizzle with remaining oil and broil in the oven for a few minutes until cheese is bubbly and breadcrumbs are golden brown.
Notes
– For a healthier option, use whole wheat pasta or add in some vegetables like spinach or bell peppers.
– You can also add cooked bacon or sausage for extra flavor.
