Description

Chicken Mushroom Stroganoff is a creamy, comforting dish made with tender chicken, sautéed mushrooms, and a rich sour cream sauce. Perfect for a quick weeknight meal or a cozy dinner, this one-pot recipe pairs beautifully with egg noodles, rice, or mashed potatoes.

  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 8 oz (225g) mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken:
    1. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden brown on both sides, about 5–7 minutes. Remove and set aside.
  2. Sauté the Vegetables:
    1. In the same skillet, melt the butter. Add the onions and sauté until translucent, about 3–4 minutes. Stir in the garlic and cook for another minute.
  3. Cook the Mushrooms:
    1. Add the mushrooms to the skillet and cook until softened and browned, about 5 minutes.
  4. Make the Sauce:
    1. Sprinkle flour over the mushroom mixture and stir well. Gradually pour in the chicken broth, stirring constantly to prevent lumps. Bring to a simmer and let it thicken slightly.
  5. Add Sour Cream and Mustard:
    1. Stir in the sour cream, Dijon mustard, and paprika. Mix well to create a smooth, creamy sauce.
  6. Combine:
    1. Return the chicken to the skillet and simmer for 5–7 minutes, until the chicken is fully cooked and the sauce is thickened.
  7. Serve:
    1. Garnish with fresh parsley and serve hot over egg noodles, rice, or mashed potatoes.

Notes

  • For added flavor, use smoked paprika instead of regular paprika.
  • Substitute sour cream with Greek yogurt for a lighter version.
