Description

A classic Italian dish featuring tender chicken breasts cooked in a rich Marsala wine sauce with flavorful mushrooms.


Ingredients

– 2 medium boneless skinless chicken breasts

– 1 teaspoon kosher salt, divided

– 1/4 teaspoon ground black pepper

– 1/4 cup all-purpose flour

– 2 tablespoons extra-virgin olive oil, divided

– 3 tablespoons softened unsalted butter, divided

– 1 medium shallot, finely chopped

– 3 cloves garlic, minced

– 8 ounces sliced cremini, shiitake, or mixed wild mushrooms

– 1/2 cup dry Marsala wine

– 1 tablespoon sherry vinegar or red wine vinegar

– 1/2 cup chicken broth

– 2 teaspoons chopped fresh thyme or 2 tablespoons chopped fresh parsley


Instructions

1. Season chicken breasts with ½ teaspoon salt and pepper, then dredge in flour.

2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet, cook chicken until golden brown, and set aside.

3. In the same skillet, sauté shallots, garlic, and mushrooms until softened.

4. Pour in Marsala wine, vinegar, and chicken broth, then simmer until sauce thickens.

5. Return chicken to the skillet, add thyme or parsley, and cook until chicken is cooked through.

6. Stir in remaining butter and season with salt and pepper to taste.


Notes

– For a healthier version, use chicken broth in place of butter for a lighter sauce.

– Add a splash of cream for a richer, creamier sauce.
