Description

Indulge in the crispy exterior and flavorful herb butter filling of this classic Chicken Kiev recipe. A delightful dish that is sure to impress your dinner guests.


Ingredients

– 2 cloves garlic, minced

– 1 pinch salt

– 2 tablespoons chopped fresh flat-leaf parsley

– 6 tablespoons unsalted butter

– 4 (8 ounce) skinless, boneless chicken breast halves, pounded to 1/4-inch thickness

– salt and pepper to taste

– 1 cup all-purpose flour

– 2 teaspoons salt

– 2 large eggs, beaten

– 2 cups panko bread crumbs

– 1 pinch cayenne pepper

– 2 cups vegetable oil for frying, or as needed


Instructions

1. In a small bowl, mix together garlic, pinch of salt, parsley, and butter. Shape into a log, wrap in plastic, and freeze until firm.

2. Season chicken with salt and pepper, then place a slice of chilled herb butter on each chicken breast. Roll up chicken, tucking in ends to seal.

3. Dredge rolled chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs mixed with cayenne pepper.

4. Heat oil in a skillet and fry chicken until golden brown and cooked through. Serve hot and enjoy!


Notes

– For a healthier version, bake the chicken in the oven instead of frying.
