Description

Crispy on the outside and tender on the inside, these chicken fritters are seasoned to perfection and fried to golden brown. They’re perfect as an appetizer, snack, or main course.


Ingredients

  • 1.5 lbs (3 large) chicken breasts, diced into 1/3-inch pieces
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour (or cornstarch for a gluten-free option)
  • 4 oz (1 1/3 cups) shredded mozzarella cheese
  • 1.5 tablespoons chopped fresh dill
  • 1/2 teaspoon salt (or to taste)
  • 1/8 teaspoon black pepper
  • 2 tablespoons olive oil (or any high-heat cooking oil)

Instructions

  1. Prepare the Chicken: Place the diced chicken pieces in a large mixing bowl.
  2. Mix Ingredients: Add the eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and black pepper to the bowl. Stir until all ingredients are well combined.
  3. Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 2 hours or overnight to allow the flavors to meld.
  4. Cook the Fritters: Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat. Once the oil is hot, drop heaping tablespoons of the chicken mixture into the skillet, slightly flattening them with the back of the spoon. Cook for 3-4 minutes on the first side until golden brown, then flip and cook for an additional 3 minutes on the other side until fully cooked through. Repeat with the remaining mixture, adding more oil as needed.
  5. Serve: Remove the fritters from the skillet and drain on paper towels. Serve warm with your choice of dipping sauce.

Notes

  • For a spicier kick, consider adding a finely chopped jalapeño or a teaspoon of hot sauce to the mixture.
  • If you prefer a milder flavor, you can omit the dill and use a mild cheese like cheddar.
  • These fritters can be made ahead and refrigerated; reheat them in a skillet over low heat before serving.
