Description

This Chicken Fajita Casserole is an easy, cheesy, and flavor-packed dish inspired by classic fajitas! Tender chicken, colorful bell peppers, and onions are baked with a creamy, spiced sauce and plenty of melted cheese. Perfect for a quick weeknight dinner with minimal prep!


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into strips
  • 1 packet fajita seasoning (or 2 tablespoons homemade fajita seasoning)
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 (10 oz) can Rotel tomatoes with green chilies, drained
  • 1/2 cup sour cream
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup shredded mozzarella cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, toss chicken strips with fajita seasoning, olive oil, garlic powder, smoked paprika, and cayenne pepper.
  3. Spread the seasoned chicken evenly in the baking dish.
  4. Layer bell peppers, onions, and Rotel tomatoes over the chicken.
  5. In a small bowl, mix sour cream and heavy cream, then pour over the casserole.
  6. Sprinkle shredded Mexican cheese and mozzarella cheese evenly on top.
  7. Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly, and the chicken is fully cooked.
  8. Remove from the oven and garnish with chopped cilantro.
  9. Serve warm over rice, in tortillas, or enjoy as is!

Notes

  • Make it low-carb by serving over cauliflower rice or lettuce wraps.
  • Want more crunch? Add crushed tortilla chips on top before baking.
  • Spice level: Adjust the cayenne pepper to your heat preference.
