This Chicken Fajita Casserole is an easy, cheesy, and flavor-packed dish inspired by classic fajitas! Tender chicken, colorful bell peppers, and onions are baked with a creamy, spiced sauce and plenty of melted cheese. Perfect for a quick weeknight dinner with minimal prep!

- 2 lbs boneless, skinless chicken breasts, cut into strips
- 1 packet fajita seasoning (or 2 tablespoons homemade fajita seasoning)
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 1 (10 oz) can Rotel tomatoes with green chilies, drained
- 1/2 cup sour cream
- 1 cup shredded Mexican cheese blend
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, toss chicken strips with fajita seasoning, olive oil, garlic powder, smoked paprika, and cayenne pepper.
- Spread the seasoned chicken evenly in the baking dish.
- Layer bell peppers, onions, and Rotel tomatoes over the chicken.
- In a small bowl, mix sour cream and heavy cream, then pour over the casserole.
- Sprinkle shredded Mexican cheese and mozzarella cheese evenly on top.
- Bake uncovered for 25–30 minutes, until the cheese is melted and bubbly, and the chicken is fully cooked.
- Remove from the oven and garnish with chopped cilantro.
- Serve warm over rice, in tortillas, or enjoy as is!
Notes
- Make it low-carb by serving over cauliflower rice or lettuce wraps.
- Want more crunch? Add crushed tortilla chips on top before baking.
- Spice level: Adjust the cayenne pepper to your heat preference.
