Description

This Chicken Cordon Bleu Meatloaf is a comforting twist on the classic, combining juicy ground chicken with layers of smoky ham and melty Swiss cheese. Rolled and baked into the perfect family-style loaf, it’s a simple yet impressive meal that’s sure to become a weeknight favorite.


Ingredients

For the meatloaf:
1 1/2 pounds ground chicken
1 egg
1/2 cup plain breadcrumbs
2 teaspoons Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon milk
1/2 cup grated Parmesan cheese
Salt and pepper to taste

For the filling:
6 slices deli ham
6 slices Swiss cheese

For the topping:
1/4 cup plain breadcrumbs
1 tablespoon melted butter


Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  • In a large mixing bowl, combine ground chicken, egg, breadcrumbs, Dijon mustard, garlic powder, onion powder, Parmesan cheese, milk, salt, and pepper. Mix until just combined.

  • On a piece of parchment paper or plastic wrap, press the chicken mixture into a rectangle, about ½-inch thick.

  • Lay ham slices evenly over the meat, followed by the Swiss cheese slices.

  • Carefully roll the meat mixture into a loaf, starting from the short end. Seal the edges and place seam-side down on the baking sheet or in the loaf pan.

  • In a small bowl, mix topping breadcrumbs with melted butter and sprinkle over the loaf.

  • Bake for 45 to 55 minutes, or until internal temperature reaches 165°F (74°C).

 

  • Let the meatloaf rest for 10 minutes before slicing and serving.


Notes

  • Wet your hands before mixing or shaping the meat to prevent sticking.

  • You can substitute ground turkey for chicken, or try smoked ham for more flavor.

  • For best results, let the meatloaf rest before slicing—it helps it hold together.
