Description

This Chicken Broccoli Cheese Rice Casserole is a creamy and comforting dish that combines tender chicken, nutritious broccoli, fluffy rice, and gooey cheese in a flavorful cheese sauce.

Chicken Broccoli Cheese Rice Casserole:

  • 2 cups chicken breasts diced (or use 2 cups cooked rotisserie chicken)
  • 2 teaspoons paprika
  • 2 teaspoons Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tablespoons olive oil
  • 2.5 cups broccoli florets cut into bite-sized pieces
  • 3 cups cooked rice long grain
  • 2 cups colby jack cheese shredded

Cheese Sauce:

  • 3 tablespoons butter
  • 1 medium white onion diced
  • 4 garlic cloves minced
  • 1/2 tsp dry mustard powder
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 3 tablespoons flour
  • 1 1/2 cups cheddar cheese shredded
  • 2 1/2 cups half and half or milk can be substituted
  • 2 tablespoons Boursin cheese
  • 2 tablespoons cream cheese or omit and use 4 tablespoons Boursin
  • 1/3 cup sour cream
  • salt to taste

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Cook Chicken: In a skillet, cook diced chicken with paprika, Italian seasoning, salt, and pepper until no longer pink.
  3. Steam Broccoli: In a separate pot, steam broccoli until tender-crisp.
  4. Make Cheese Sauce: In a saucepan, melt butter and sauté onions and garlic. Add mustard, paprika, pepper, and flour. Slowly whisk in milk, then add cheddar, Boursin, and cream cheeses until smooth. Stir in sour cream and season with salt.
  5. Assemble Casserole: In a baking dish, layer cooked rice, chicken, broccoli, and cheese sauce. Top with shredded colby jack cheese.
  6. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly and golden.

Notes

  • You can add breadcrumbs on top for a crunchy topping before baking.
  • Feel free to customize the vegetables or add in additional seasonings for extra flavor.
