Description

Chicken Bhuna is a rich, aromatic Indian curry where tender chicken is cooked in a spiced sauce that’s full of deep flavors. This slow-cooked dish is perfect for cozy dinners and special occasions, offering a hearty and satisfying meal that will leave your guests asking for more. Ingredients

  • 2 lbs chicken (bone-in thighs or boneless pieces)
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped (or 1 cup canned tomatoes)
  • 4 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • 12 green chilies, sliced (optional)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 cup water (if needed)
  • Fresh cilantro, for garnish

Instructions

  1. Fry the Onions: Heat oil or ghee in a pan over medium heat. Add sliced onions and cook for 10-12 minutes until golden brown.

  2. Add Garlic, Ginger & Spices: Stir in garlic, ginger, cumin, coriander, turmeric, and chili powder. Cook for 1-2 minutes to release their aroma.

  3. Cook the Chicken: Add the chicken and stir to coat with the spice mixture. Cook for 5-7 minutes until browned.

  4. Add Tomatoes & Simmer: Stir in the tomatoes. Cover and let it simmer for 15-20 minutes, stirring occasionally, until the chicken is tender and the sauce thickens.

  5. Finish with Garam Masala: Sprinkle garam masala in the last 2 minutes. Add green chilies (if using).

  6. Serve & Enjoy: Garnish with fresh cilantro and serve with naan or rice.


Notes

  • Slow cooking deepens the flavor—don’t rush frying the onions.
  • Avoid adding too much water; bhuna should have a thick sauce.
  • For extra tenderness, marinate the chicken in yogurt, garlic, and spices for 30 minutes before cooking.
