Ingredients
- 4 pre-cooked chicken apple sausages, sliced into rounds
- 1 lb baby potatoes, halved
- 2 cups Brussels sprouts, quartered
- 1 large apple, cored and sliced into wedges
- 1/2 red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic vinegar (optional, for finishing)
Instructions
-
Preheat Oven:
Preheat your oven to 400°F (200°C). -
Prepare Ingredients:
Slice the sausage into rounds, halve the baby potatoes, quarter the Brussels sprouts, core and slice the apple, and thinly slice the red onion. -
Toss with Seasoning:
In a large mixing bowl, combine all ingredients. Drizzle with olive oil, Dijon mustard, maple syrup, and season with thyme, rosemary, salt, and pepper. Toss well to ensure even coating. -
Arrange on Sheet Pan:
Spread the mixture in a single layer on a large sheet pan. Make sure the ingredients are not overcrowded for even roasting. -
Roast to Perfection:
Bake for 25-30 minutes, tossing halfway through, until the potatoes are tender, and everything is golden brown and caramelized. -
Serve and Enjoy:
Remove from the oven and drizzle with balsamic vinegar if desired. Garnish with fresh herbs and serve hot.
Notes
- Overcrowding the pan can lead to steaming instead of roasting. Use two pans if necessary.
- Sweet potatoes, carrots, or bell peppers can be added for extra variety.
- For extra depth of flavor, drizzle with balsamic vinegar after roasting.
- Make it dairy-free by ensuring the sausage and other ingredients contain no dairy additives.
