Description

A quick and easy one-pan meal featuring juicy chicken apple sausage, roasted potatoes, Brussels sprouts, and apples, all tossed in a flavorful olive oil, Dijon mustard, and maple syrup dressing. Ready in just 30 minutes, this dish is perfect for busy weeknights!

Ingredients

Units Scale
  • 4 pre-cooked chicken apple sausages, sliced into rounds
  • 1 lb baby potatoes, halved
  • 2 cups Brussels sprouts, quartered
  • 1 large apple, cored and sliced into wedges
  • 1/2 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional, for finishing)

Instructions

  1. Preheat Oven:
Preheat your oven to 400°F (200°C).

  2. Prepare Ingredients:
Slice the sausage into rounds, halve the baby potatoes, quarter the Brussels sprouts, core and slice the apple, and thinly slice the red onion.

  3. Toss with Seasoning:
In a large mixing bowl, combine all ingredients. Drizzle with olive oil, Dijon mustard, maple syrup, and season with thyme, rosemary, salt, and pepper. Toss well to ensure even coating.

  4. Arrange on Sheet Pan:
Spread the mixture in a single layer on a large sheet pan. Make sure the ingredients are not overcrowded for even roasting.

  5. Roast to Perfection:
Bake for 25-30 minutes, tossing halfway through, until the potatoes are tender, and everything is golden brown and caramelized.

  6. Serve and Enjoy:
Remove from the oven and drizzle with balsamic vinegar if desired. Garnish with fresh herbs and serve hot.

Notes

  • Overcrowding the pan can lead to steaming instead of roasting. Use two pans if necessary.
  • Sweet potatoes, carrots, or bell peppers can be added for extra variety.
  • For extra depth of flavor, drizzle with balsamic vinegar after roasting.
  • Make it dairy-free by ensuring the sausage and other ingredients contain no dairy additives.
