Chicken and Green Beans:
- 1 1/2 pounds Boneless skinless chicken breasts, cut into bite-sized pieces (2 large chicken breasts)
- 3 tablespoons Low sodium soy sauce
- 2 tablespoons Rice wine vinegar
- Salt and pepper
- Olive oil
- 12 ounces Green beans, trimmed and cut into bite sized pieces (about 2 cups)
Honey Lemon Sauce:
- 3/4 cup Low sodium chicken broth
- 1 Large lemon, zested and juiced
- 1/4 cup Honey, more/less to taste
- 2 tablespoons Cornstarch
- 1/4 teaspoon Ground ginger
- 1/2 teaspoon Red pepper flakes
- 1 Garlic clove, minced
- Sliced green onions and sesame seeds, for garnish (optional)
Instructions
- Marinate the chicken: In a bowl, combine chicken pieces, soy sauce, rice wine vinegar, salt, and pepper. Let it marinate for 15-20 minutes.
- Make the honey lemon sauce: In a separate bowl, whisk together chicken broth, lemon zest, lemon juice, honey, cornstarch, ginger, red pepper flakes, and minced garlic.
- Stir fry: In a large skillet or wok, heat olive oil over medium-high heat. Add marinated chicken and cook until browned. Add green beans and pour in the honey lemon sauce. Cook until the sauce thickens and coats the chicken and green beans.
- Serve: Garnish with sliced green onions and sesame seeds if desired. Serve hot over rice or noodles.
Notes
- You can customize the level of spiciness by adjusting the amount of red pepper flakes in the sauce.
