Ingredients

Units Scale
  • For the Chicken:
    • 2 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste
  • For the Alfredo Sauce:
    • 2 tablespoons unsalted butter
    • 2 cloves garlic, minced
    • 1 1/2 cups heavy cream
    • 1 cup freshly grated Parmesan cheese
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Pasta:
    • 12 ounces fettuccine pasta
    • 1 tablespoon olive oil (optional, for boiling pasta)
    • Fresh parsley (chopped, for garnish)

Instructions

  1. Cook the Pasta:
    1. Bring a large pot of salted water to a boil.
    2. Add fettuccine and cook according to package instructions. Reserve ½ cup of pasta water before draining.
  2. Prepare the Chicken:
    1. Season the chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
    2. Heat olive oil in a skillet over medium heat. Add chicken and cook for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F/74°C). Remove from skillet and let rest for 5 minutes before slicing.
  3. Make the Alfredo Sauce:
    1. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
    2. Pour in heavy cream and simmer for 3-4 minutes, stirring frequently.
    3. Gradually stir in Parmesan cheese, whisking until the sauce is smooth. Season with salt and black pepper.
  4. Combine and Serve:
    1. Add the cooked fettuccine to the Alfredo sauce, tossing to coat. If the sauce is too thick, stir in reserved pasta water a little at a time.
    2. Serve pasta topped with sliced chicken breast. Garnish with chopped parsley if desired.

Notes

  • For extra flavor, add a pinch of nutmeg to the Alfredo sauce.
  • Substitute heavy cream with half-and-half for a lighter version.
  • Use freshly grated Parmesan cheese for the best taste and texture.
