Description

These Chicken Alfredo Lasagna Roll Ups are a delicious twist on classic lasagna, featuring tender noodles rolled with a creamy chicken and ricotta filling, all smothered in rich Alfredo sauce. It’s a perfect dish for weeknights or special occasions that’s both fun to make and easy to serve!


Ingredients

  • 12 lasagna noodles
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 1/2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 3 cups Alfredo sauce (store-bought or homemade)

Instructions

  1. Cook the Noodles

    • Boil the lasagna noodles according to package instructions.

    • Drain and lay flat on parchment paper to prevent sticking.

  2. Prepare the Filling

    • In a bowl, mix shredded chicken, ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.

  3. Assemble the Roll Ups

    • Spread a thin layer of Alfredo sauce in the bottom of a baking dish.

    • Take each noodle, spread the chicken mixture evenly over it, then roll it up.

    • Place each roll, seam-side down, in the prepared baking dish.

  4. Top with Sauce and Cheese

    • Pour the remaining Alfredo sauce over the roll ups.

    • Sprinkle the remaining mozzarella cheese on top.

  5. Bake

    • Cover with foil and bake at 375°F for 25 minutes.

    • Remove foil and bake for another 10 minutes until the cheese is golden and bubbly.


Notes

Don’t overfill – A thin layer of filling makes rolling easier.
Use fresh Parmesan – It melts better and enhances the flavor.
