Cherry Filling:

- 16 ladyfingers
- 8 oz mascarpone cheese
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup brewed espresso, cooled
- Cocoa powder, for dusting
- Shaved dark chocolate (optional)
Instructions
- Prepare Cherry Filling: Toss cherries with Amaretto and sugar. Let sit for at least 30 minutes.
- Make Tiramisu Layers: In a bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth. Dip ladyfingers in espresso and layer with mascarpone mixture and cherry filling.
- Repeat Layers: Continue layering until all ingredients are used, ending with a dusting of cocoa powder and shaved dark chocolate.
- Chill: Refrigerate for at least 4 hours before serving.
Notes
- You can adjust the sweetness by adding more or less sugar to the cherry filling.
