- 4 large Portobello mushrooms, stems removed and gills scraped
- 2 tbsp olive oil
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Mushrooms: Brush the Portobello mushrooms with olive oil on both sides and season with salt and pepper. Place the mushrooms on a baking sheet, gill side up.
