    • 1 lb chicken breasts or tenderloins, cut into bite-sized pieces
    • 1 lb baby potatoes, halved or cubed
    • 2 tbsp olive oil (divided)
    • 1 1/2 tsp paprika
    • 1 1/2 tsp poultry seasoning
    • 1 tsp black pepper
    • 1/2 tsp salt
  • Sauce & Garnish
    • 2 tbsp butter
    • 2 garlic cloves, minced
    • 1/2 cup garlic Parmesan sauce (store-bought or homemade)
    • 1 cup shredded mozzarella cheese
    • Fresh parsley (optional)

Instructions

  1. Prepare Ingredients: Preheat the oven to 400°F. Toss potatoes in 1 tbsp olive oil and half the seasoning mix (paprika, poultry seasoning, salt, and pepper). Place on a baking sheet and roast for 20 minutes until crispy.
  2. Cook Chicken: Heat the remaining olive oil in a skillet over medium-high heat. Season the chicken with the rest of the spice mix and cook for 7–10 minutes, turning occasionally until golden brown and fully cooked (internal temperature of 165°F). Remove and set aside.
  3. Sauté Potatoes and Garlic: Add butter and minced garlic to the skillet, stirring for 1–2 minutes. Return roasted potatoes to the skillet and toss to combine.
  4. Combine and Finish: Add the cooked chicken back to the skillet and pour in the garlic Parmesan sauce, stirring to coat evenly. Sprinkle mozzarella over the top, cover, and let the cheese melt (about 5 minutes).
  5. Serve: Garnish with parsley if desired. Serve hot with a fresh salad, steamed vegetables, or crusty bread.

Notes

  • Cheese Options: Use shredded mozzarella, Monterey Jack, or provolone for a creamy melt. Grated Parmesan also works for topping.
  • Potato Tips: Yukon Gold or baby potatoes work best; for added crispiness, use an air fryer.
