Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add diced potatoes, season with salt, pepper, garlic powder, and paprika. Cook for 8-10 minutes, stirring occasionally, until golden and crispy.
- In a bowl, whisk together eggs and milk.
- Pour the egg mixture over the potatoes and gently stir. Cook until eggs are set, about 3-4 minutes.
- Sprinkle shredded cheese on top and cover for 1-2 minutes until melted.
