Scale
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs, beaten
- 1/2 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions or chives
- 1/4 cup milk (or as needed for consistency)
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- Non-stick cooking spray or melted butter for greasing
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or melted butter.
- Prepare the Mixture: In a mixing bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper. Stir until well mixed. Add milk as needed to achieve a slightly thick but scoopable consistency.
- Portion into Muffin Tin: Scoop the mixture into the prepared muffin tin, filling each cup about 3/4 full. Smooth the tops with the back of a spoon.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the tops are golden and the edges are crispy.
- Cool and Serve: Allow the puffs to cool slightly in the tin before carefully removing them. Serve warm with a dollop of sour cream or your favorite dipping sauce, if desired.
Notes
- You can add extra mix-ins like cooked bacon bits, sautéed onions, or diced bell peppers for additional flavor.
- If you don’t have a muffin tin, you can form small patties and bake them on a greased baking sheet.
