  • 1 lb (450g) ground beef
  • 1/2 lb (225g) ground pork (optional)
  • 1 cup (100g) breadcrumbs
  • 1 egg, beaten
  • 1/3 cup (80ml) milk
  • 1/2 cup (75g) diced onion
  • 1/4 cup (60ml) ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Mashed Potato Layer:

  • 3 cups (450g) mashed potatoes (prepared and seasoned to taste)
  • 1/4 cup (60ml) sour cream
  • 1/2 cup (120ml) milk
  • 1/2 tsp garlic powder

For the Topping:

  • 1 1/2 cups (150g) shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tbsp chopped green onions

Instructions

  1. Prepare the Meatloaf Layer:
    Preheat the oven to 375°F (190°C). In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, milk, onion, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined. Press the mixture evenly into the bottom of a greased 9×9-inch baking dish.
  2. Bake the Meatloaf Layer:
    Bake for 25 minutes, or until the meatloaf is partially cooked but not fully done.
  3. Prepare the Mashed Potatoes:
    While the meatloaf bakes, mix the prepared mashed potatoes with sour cream, milk, and garlic powder until smooth and creamy.
  4. Assemble the Casserole:
    Remove the meatloaf layer from the oven and spread the mashed potato mixture evenly on top. Sprinkle with shredded cheddar cheese and crumbled bacon.
  5. Bake the Casserole:
    Return the casserole to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
