This Cheesy Loaded Meatloaf Casserole with Vegetables takes classic meatloaf to a whole new level! Ground beef is mixed with flavorful seasonings, topped with gooey melted cheese, and surrounded by a hearty medley of vegetables for a comforting one-pan dinner that’s perfect for the whole family. It’s like your favorite meatloaf, but in casserole form with extra cheesy goodness.

Ingredients

Units Scale

For the Meatloaf

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Casserole

  • 2 cups baby potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup ketchup (optional for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, Parmesan, egg, onion, garlic, oregano, basil, salt, and pepper. Mix until well combined.
  3. Press the meat mixture into the bottom of a greased 9×13-inch baking dish, forming an even layer.
  4. Arrange the diced potatoes, carrots, and broccoli around the meatloaf in the baking dish.
  5. Cover the casserole with aluminum foil and bake for 40 minutes.
  6. Remove the foil and sprinkle the shredded cheddar and mozzarella cheese evenly over the meatloaf. Add ketchup on top if desired.
  7. Return the casserole to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly, and the vegetables are tender.
  8. Let the casserole rest for a few minutes before serving.

Notes

  • Vegetable Options: Swap out the carrots and broccoli for green beans, zucchini, or bell peppers.
  • Cheese Options: Use a blend of your favorite cheeses like Monterey Jack, Swiss, or Gouda for a different flavor profile.
  • Spicy Twist: Add a few dashes of hot sauce or a pinch of red pepper flakes to the meat mixture for some heat.
