Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, Parmesan, egg, onion, garlic, oregano, basil, salt, and pepper. Mix until well combined.
- Press the meat mixture into the bottom of a greased 9×13-inch baking dish, forming an even layer.
- Arrange the diced potatoes, carrots, and broccoli around the meatloaf in the baking dish.
- Cover the casserole with aluminum foil and bake for 40 minutes.
- Remove the foil and sprinkle the shredded cheddar and mozzarella cheese evenly over the meatloaf. Add ketchup on top if desired.
- Return the casserole to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly, and the vegetables are tender.
- Let the casserole rest for a few minutes before serving.
