Main Filling:

- 1/2 teaspoon crushed red pepper flake
- 2 tablespoons tomato paste
- 1/2 cup chicken broth or water
- Kosher salt and freshly ground black pepper, to taste

- 1 cup Monterey Jack cheese, grated
- 2 boxes refrigerated pie crust
- 1 egg
Instructions
- Cook Beef Mixture: In a skillet, cook ground beef, onion, bell pepper, and garlic until beef is browned. Add cumin, oregano, chili powder, red pepper flake, tomato paste, and broth. Simmer until liquid is reduced.
- Assemble Empanadas: Roll out pie crusts and cut into circles. Fill each with beef mixture and cheese. Fold over and crimp edges.
- Bake: Brush empanadas with beaten egg and bake until golden brown.
