Description

Main Filling:

  • 1 lb ground beef
  • 1/2 medium yellow onion, diced
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon crushed red pepper flake
  • 2 tablespoons tomato paste
  • 1/2 cup chicken broth or water
  • Kosher salt and freshly ground black pepper, to taste

Additional:

  • 1 cup Monterey Jack cheese, grated
  • 2 boxes refrigerated pie crust
  • 1 egg

Instructions

  1. Cook Beef Mixture: In a skillet, cook ground beef, onion, bell pepper, and garlic until beef is browned. Add cumin, oregano, chili powder, red pepper flake, tomato paste, and broth. Simmer until liquid is reduced.
  2. Assemble Empanadas: Roll out pie crusts and cut into circles. Fill each with beef mixture and cheese. Fold over and crimp edges.
  3. Bake: Brush empanadas with beaten egg and bake until golden brown.
