- 1 can (10.5 oz) cream of mushroom soup

For the Biscuit Topping:

- 1/4 teaspoon baking soda
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/2 cup shredded cheddar cheese
- 1/2 cup buttermilk
- 1/4 cup unsalted butter, melted
Instructions
- Prepare the Ground Beef Mixture:
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the diced onion and minced garlic to the skillet. Sauté for 3-4 minutes until softened.
- Stir in frozen vegetables, cream of mushroom soup, beef broth, salt, pepper, paprika, and thyme. Simmer for 5-7 minutes until the mixture thickens slightly. Transfer to a greased 9×9-inch baking dish.
- Make the Biscuit Topping:
- In a mixing bowl, whisk together flour, baking powder, baking soda, garlic powder, and salt.
- Stir in shredded cheddar cheese.
- Add buttermilk and melted butter, mixing until just combined (don’t overmix).
- Assemble and Bake:
- Drop spoonfuls of the biscuit topping evenly over the beef mixture. Spread gently if needed, but leave some gaps for steam to escape.
- Bake for 20-25 minutes until the biscuit topping is golden brown and cooked through.
- Serve:
- Let the cobbler rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
Notes
- Substitute cream of mushroom soup with cream of chicken or cream of celery soup for variation.
- Add a pinch of cayenne to the biscuit mix for a spicy kick.
- Serve with a side salad or garlic bread for a complete meal.
