- 1.5 lbs boneless, skinless chicken breast or tenders thighs
- 2 lbs red potatoes
- 2/3 cup ranch dressing
- 1 tablespoon paprika
- 2 teaspoons onion powder
- 1 tablespoon ranch seasoning
- 1 tsp each salt and pepper
- 6 tablespoons butter, cubed
- 5 cloves garlic, minced
- 5 strips bacon, cooked crispy and diced
- 2 tablespoons chives, minced
Cheese Mixture:
- 1/2 cup sour cream
- 1/2 cup parmesan, grated
- 1 cup cheddar cheese, shredded
- 1/2 cup mozzarella, shredded
Instructions
- Prepare Slow Cooker: Grease the slow cooker with cooking spray.
- Layer Ingredients: Place chicken at the bottom, then layer potatoes on top.
- Season: In a bowl, mix ranch dressing, paprika, onion powder, ranch seasoning, salt, and pepper. Pour over potatoes.
- Add Butter: Scatter butter cubes over the top.
- Cook: Cover and cook on low for 6-7 hours.
- Add Cheese: In a bowl, mix sour cream, parmesan, cheddar, and mozzarella. Spread over the cooked chicken and potatoes.
- Finish: Sprinkle bacon and chives on top. Cover and cook for an additional 30 minutes until cheese is melted.
