Balsamic Reduction:

Salad:
- 3 large tomatoes, cut into 1/2-inch slices
- 1 (16 ounce) package fresh mozzarella cheese, cut into 1/4-inch slices
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup fresh basil leaves
- 1/4 cup extra-virgin olive oil
Instructions
- Make the balsamic reduction: In a small saucepan, combine balsamic vinegar and honey. Simmer over low heat until thickened, about 10-15 minutes. Let cool.
- Assemble the salad: On a serving platter, alternate slices of tomatoes and mozzarella. Season with salt and pepper. Top with fresh basil leaves.
- Drizzle with balsamic reduction: Drizzle the salad with the balsamic reduction and olive oil.
Notes
- For a variation, you can add sliced avocado or prosciutto to the salad.
- Make sure to use ripe, flavorful tomatoes for the best results.
