Main Ingredients:
- 3 tablespoons olive oil
- 1 pound boneless skinless chicken breasts cubed
- 16 ounces andouille sausage sliced
- 1 medium white onion diced
- 4 medium celery ribs sliced
- 1 medium green bell pepper diced
- 1 medium jalapeno minced
- 4 cloves minced garlic
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1 teaspoon cayenne pepper
- 3 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 (15 ounce cans) great northern beans drained
- 1/2 pound raw shrimp peeled, deveined, tails removed
- 1/2 cup heavy cream
Instructions
- Cook Chicken and Sausage: Heat olive oil in a large pot, cook chicken and sausage until browned. Remove from pot and set aside.
- Saute Vegetables: In the same pot, saute onion, celery, bell pepper, jalapeno, and garlic until softened.
- Add Seasonings and Flour: Stir in cumin, paprika, chili powder, cayenne, and flour, cook for a minute.
- Add Broth and Beans: Pour in chicken broth and add beans, bring to a simmer.
- Finish Chili: Return chicken and sausage to the pot, add shrimp and cream, simmer until shrimp is cooked through.
Notes
- If you prefer a spicier chili, increase the amount of cayenne pepper or add hot sauce to taste.
- This chili is even better the next day as the flavors have more time to meld together.
