Description

This Cajun White Chicken Chili is a flavorful twist on a classic dish, combining chicken, andouille sausage, shrimp, and beans in a creamy broth spiced with Cajun seasonings.

Main Ingredients:

  • 3 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts cubed
  • 16 ounces andouille sausage sliced
  • 1 medium white onion diced
  • 4 medium celery ribs sliced
  • 1 medium green bell pepper diced
  • 1 medium jalapeno minced
  • 4 cloves minced garlic
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 2 (15 ounce cans) great northern beans drained
  • 1/2 pound raw shrimp peeled, deveined, tails removed
  • 1/2 cup heavy cream

Instructions

  1. Cook Chicken and Sausage: Heat olive oil in a large pot, cook chicken and sausage until browned. Remove from pot and set aside.
  2. Saute Vegetables: In the same pot, saute onion, celery, bell pepper, jalapeno, and garlic until softened.
  3. Add Seasonings and Flour: Stir in cumin, paprika, chili powder, cayenne, and flour, cook for a minute.
  4. Add Broth and Beans: Pour in chicken broth and add beans, bring to a simmer.
  5. Finish Chili: Return chicken and sausage to the pot, add shrimp and cream, simmer until shrimp is cooked through.

Notes

  • If you prefer a spicier chili, increase the amount of cayenne pepper or add hot sauce to taste.
  • This chili is even better the next day as the flavors have more time to meld together.
