- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 4 cups (960 g) chicken broth
- 4 large russet potatoes, peeled, cubed
- 1/2 cup (119 g) heavy whipping cream
- 1 cup (113 g) mild cheddar cheese, shredded
- parsley, chopped for garnish
Instructions
- Saute Sausage: In a large pot, heat vegetable oil over medium-high heat. Add sliced andouille sausage and cook until browned. Remove and set aside.
- Cook Vegetables: In the same pot, saute onion, celery, bell pepper, and garlic until softened.
- Add Seasonings and Broth: Stir in Cajun seasoning, salt, pepper, paprika, cayenne pepper, chicken broth, and potatoes. Simmer until potatoes are tender.
- Finish Soup: Stir in heavy cream and cheddar cheese until melted. Serve hot garnished with parsley.
Notes
- You can adjust the spiciness by increasing or decreasing the amount of cayenne pepper in the soup.
- For a lighter version, you can use low-fat milk instead of heavy cream.
