Description

Cajun Corn on the Cob is a spicy and flavorful twist on a classic summer side dish. The corn is slathered in a mixture of melted butter, Cajun seasoning, lime juice, and herbs, then grilled to perfection.

Ingredients

Units Scale
  • 4 corn on the cob
  • 1/4 cup melted butter
  • 2 tablespoon Cajun seasoning
  • 2 tablespoon lime juice
  • 1 teaspoon kosher salt
  • 1 tablespoon chopped parsley or cilantro

Instructions

  1. Prepare the grill: Preheat the grill to medium-high heat.
  2. Prepare the corn: Peel back the husks of the corn without removing them. Remove the silk from the corn and pull the husks back up.
  3. Season the corn: In a small bowl, mix the melted butter, Cajun seasoning, lime juice, salt, and herbs. Brush the mixture onto the corn.
  4. Grill the corn: Place the corn on the grill and cook for about 15-20 minutes, turning occasionally, until the corn is tender and slightly charred.
  5. Serve: Remove the corn from the grill, sprinkle with additional seasoning if desired, and serve hot.

Notes

  • You can adjust the level of spiciness by adding more or less Cajun seasoning.
  • For a smokier flavor, try grilling the corn directly on the grill without the husks.
