Ingredients

Units Scale
  • For the Chicken:
    • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
    • 1 tbsp Cajun seasoning
    • 1 tbsp olive oil
  • For the Pasta:
    • 12 oz penne or fettuccine pasta
    • 4 cups chicken broth
  • For the Sauce:
    • 2 tbsp unsalted butter
    • 1 small onion, finely chopped
    • 3 garlic cloves, minced
    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1 tsp Cajun seasoning (adjust to taste)
    • Salt and pepper to taste

For Garnish:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Prepare the Chicken:
  2. Toss the chicken pieces with Cajun seasoning.
  3. Heat olive oil in a large pot over medium heat. Sear the chicken until golden and cooked through. Remove and set aside.
  4. Cook the Vegetables:
  5. In the same pot, melt butter and sauté the onion and garlic until fragrant.
  6. Add the bell peppers and cook until slightly softened, about 3-4 minutes.
  7. Cook the Pasta:
  8. Pour in the chicken broth and bring it to a boil. Add the pasta and cook according to package instructions until al dente. Stir occasionally to prevent sticking.
  9. Make the Sauce:
  10. Reduce heat to low. Stir in heavy cream, Parmesan cheese, and Cajun seasoning.
  11. Add the cooked chicken back to the pot and toss until everything is coated in the creamy sauce. Adjust seasoning with salt and pepper.
  12. Serve:
  13. Garnish with fresh parsley and extra Parmesan cheese.
  14. Serve hot with a side of garlic bread or a crisp green salad.

Notes

  • For extra heat, add a pinch of cayenne pepper or red pepper flakes.
  • You can substitute heavy cream with half-and-half for a lighter version.
