For the Soup:

  • 1 lb ground beef (or ground turkey for a leaner option)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth (or chicken broth for a lighter version)
  • 1 cup water
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste

  • Shredded cheddar cheese
  • Sour cream
  • Fresh cilantro, chopped
  • Avocado, diced
  • Tortilla chips (optional, for extra crunch)

Instructions

  1. Cook the Ground Meat: In a large pot or Dutch oven, heat a drizzle of oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Sauté the Veggies: Add the diced onion and garlic to the pot and sauté for 2-3 minutes until softened and fragrant.
  3. Add the Tomatoes and Seasonings: Stir in the diced tomatoes, black beans, corn, green chilies, taco seasoning, cumin, chili powder, and smoked paprika (if using). Cook for 1-2 minutes to allow the flavors to blend.
  4. Add the Broth and Simmer: Pour in the beef broth and water, stirring to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, stirring occasionally.
  5. Taste and Adjust: Taste the soup and add salt and pepper to your liking. If you prefer a spicier soup, add more chili powder or a few dashes of hot sauce.
