- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon fresh lemon zest
- 1 1/2 cups all-purpose flour
Instructions
Preheat the Oven & Prepare the Baking Sheet
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Cream the Butter and Sugar
- In a large bowl, use an electric mixer to cream butter and sugar together until light and fluffy.
3. Add the Egg Yolks, Vanilla, and Lemon Zest
- Mix in egg yolks, vanilla extract, and lemon zest until well combined.
4. Incorporate the Flour
- Gradually add flour, mixing until a soft dough forms. If too sticky, chill the dough for 30 minutes.
5. Shape the Cookies
- Roll dough into walnut-sized balls, then gently flatten into discs.
- Optionally, press an indentation in the center with a fork.
6. Bake the Cookies
- Place cookies on the prepared baking sheet, spacing them 1 inch apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
7. Cool & Enjoy
- Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
