  • 1/4 cup brown sugar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat your oven to 400°F (200°C) if using the oven to finish cooking.
  2. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Pat the pork chops dry with a paper towel and rub the spice mixture generously on both sides of each chop.
  4. Heat olive oil or butter in a large oven-safe skillet over medium-high heat. Add the pork chops and sear for 2-3 minutes on each side until a golden-brown crust forms.
  5. If using the oven, transfer the skillet to the preheated oven and bake for 6-8 minutes until the internal temperature reaches 145°F (63°C). For stovetop-only cooking, lower the heat and cook for an additional 4-6 minutes, flipping once, until fully cooked.
  6. Let the pork chops rest for 5 minutes before serving to retain their juices.
