  • For the Taquitos:
    • 8 small flour or corn tortillas
    • 1/4 cup vegetable oil (for brushing or frying)

Instructions

  1. Make the Filling:
    1. In a medium bowl, whisk together eggs, milk, salt, and pepper.
    2. Heat a nonstick skillet over medium heat. Scramble the eggs until just set, then stir in the cooked sausage, cheese, and green chilies. Remove from heat.
  2. Assemble the Taquitos:
    1. Place a small amount of the egg mixture onto each tortilla. Roll the tortilla tightly around the filling and place seam-side down.
  3. Cook the Taquitos:
    1. For Baking: Preheat the oven to 425°F (220°C). Place taquitos seam-side down on a greased baking sheet, brush lightly with oil, and bake for 12–15 minutes or until golden and crispy.
    2. For Frying: Heat vegetable oil in a skillet over medium-high heat. Fry the taquitos seam-side down until golden brown, turning as needed, about 2–3 minutes per side.
