Description

Soft, fluffy rolls stuffed with a savory combination of eggs, crispy bacon, melted cheese, and fresh herbs. These make-ahead breakfast rolls are perfect for busy mornings, brunch gatherings, or a comforting start to your day!


Ingredients

  • 1 package (12) dinner rolls (e.g., Hawaiian rolls)
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 6 strips of cooked bacon, crumbled
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder (optional)
  • 2 tbsp chopped fresh parsley or chives (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. Cut the dinner rolls in half horizontally, keeping the rolls connected. Place the bottom half of the rolls in the prepared dish.
  3. In a bowl, whisk together the eggs, milk, salt, and pepper. Scramble the eggs in a nonstick skillet over medium heat until just set.
  4. Spread the scrambled eggs evenly over the bottom half of the rolls. Sprinkle with crumbled bacon and shredded cheese.
  5. Place the top half of the rolls back on and brush with melted butter. If desired, mix garlic powder and parsley into the butter for extra flavor.
  6. Cover the dish with foil and bake for 10 minutes. Remove the foil and bake for an additional 5-7 minutes, until the tops are golden and the cheese is melted.
  7. Serve warm and enjoy!
