Ingredients

Scale

For the Sausage Gravy:

  • 1 pound breakfast sausage (mild or spicy)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)

For the Casserole:

  • 1 (16-ounce) can refrigerated biscuits (or homemade)
  • 6 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon melted butter (for brushing, optional)

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Make the Sausage Gravy

  1. In a large skillet, cook the breakfast sausage over medium heat until browned and crumbled.
  2. Sprinkle in the flour and stir until the sausage is coated.
  3. Gradually pour in the milk, stirring constantly, until the gravy thickens.
  4. Season with salt, pepper, and garlic powder (if using). Remove from heat.

Step 3: Assemble the Casserole

  1. Cut the biscuits into quarters and spread half of them across the bottom of the baking dish.
  2. Pour the sausage gravy evenly over the biscuit layer.
  3. In a bowl, whisk together eggs and ¼ cup milk, then pour over the gravy.
  4. Sprinkle with shredded cheese (if using).
  5. Arrange the remaining biscuit pieces on top.

Step 4: Bake to Perfection

  1. Bake for 30-35 minutes, or until the biscuits are golden brown and cooked through.
  2. Optional: Brush the baked biscuits with melted butter for extra flavor.
  3. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • Don’t Overbake – Check at 30 minutes to keep the biscuits soft and fluffy.
  • Make It Spicier – Use hot sausage or add a pinch of cayenne to the gravy.
  • For a Fluffier Egg Layer – Let the eggs sit for 5 minutes before baking.
  • Vegetable Add-Ins – Try adding diced bell peppers, onions, or spinach for extra flavor.
  • Dairy-Free Option – Use oat milk or almond milk and dairy-free cheese.
  • Gluten-Free Option – Swap in gluten-free biscuits and use cornstarch instead of flour for the gravy.
