Ingredients

Units Scale

For the Dough:

  • 1 cup warm milk (110°F/45°C)
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 4 cups all-purpose flour

For the Strawberry Cheesecake Filling:

  • 1 cup fresh strawberries, diced (or frozen, thawed and drained)
  • 1/2 cup cream cheese, softened
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Activate the Yeast: In a large bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until frothy.
  2. Make the Dough: Add eggs, melted butter, and salt to the yeast mixture. Gradually add flour, mixing until a soft dough forms. Knead for 8–10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
  3. Prepare the Filling: In a small saucepan over medium heat, combine strawberries, sugar, and cornstarch. Cook until thickened, about 5 minutes. Let cool. In a separate bowl, mix cream cheese and vanilla until smooth. Fold in the cooled strawberry mixture.
  4. Roll and Fill: Roll the dough out into a large rectangle (approximately 15×10 inches). Spread the strawberry cheesecake filling evenly over the dough. Roll up tightly from the long side and cut into 12 equal slices.
  5. Second Rise: Place rolls in a greased 9×13-inch baking dish. Cover and let rise for 30–40 minutes.
  6. Bake: Preheat oven to 350°F (175°C). Bake the rolls for 20–25 minutes, or until lightly golden.
  7. Glaze the Rolls: In a small bowl, whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm rolls.

Notes

  • For a shortcut, use pre-made dough like crescent roll sheets.
  • Frozen strawberries work well; just ensure they’re thawed and drained.
  • Store rolls in an airtight container for up to 3 days.
