Scale
- 1 lb (450g) beef sirloin or tenderloin, cut into thin strips
- 1 tbsp olive oil
- 1 medium onion, chopped
- 8 oz (225g) mushrooms, sliced
- 2 cloves garlic, minced
- 1 tsp paprika
- 2 cups (480ml) beef broth
- 1 tbsp Worcestershire sauce
- 1/2 cup (120ml) sour cream
- 1 tbsp Dijon mustard (optional)
- 1 tbsp flour (for thickening)
- Salt and pepper, to taste
- 8 oz (225g) egg noodles or pasta of choice
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Beef:
Heat the olive oil in a large pot or skillet over medium-high heat. Add the beef strips and cook for 3-4 minutes, or until browned. Remove the beef from the pot and set aside. - Sauté the Vegetables:
In the same pot, add the chopped onion and sliced mushrooms. Cook for 5-7 minutes until the vegetables soften and start to brown. Add the minced garlic and paprika, cooking for another 1-2 minutes until fragrant. - Make the Sauce:
Sprinkle the flour over the vegetables and stir to coat. Slowly pour in the beef broth, whisking to remove any lumps. Add Worcestershire sauce, and bring the mixture to a simmer. Let it cook for 5 minutes, until it thickens slightly. - Combine the Beef:
Return the cooked beef to the pot, along with any juices that have accumulated. Stir in the sour cream and Dijon mustard, and simmer for another 2-3 minutes until the beef is tender and the sauce is creamy. Season with salt and pepper to taste. - Cook the Pasta:
Meanwhile, cook the egg noodles (or your choice of pasta) according to package instructions. Drain and add to the beef stroganoff sauce, stirring to coat. - Serve:
Garnish with fresh parsley and serve hot, enjoying this creamy and comforting dish.
Notes
- For extra flavor, you can add a splash of white wine when cooking the mushrooms.
- If you prefer a thicker sauce, you can increase the amount of flour or add a cornstarch slurry (cornstarch mixed with water).
- Serve with a side of steamed vegetables or a simple salad for a complete meal.
