Description

This hearty Beef Stroganoff Cottage Pie with a crispy Parmesan topping is a delicious twist on a classic comfort food dish. Tender beef, savory mushrooms, and creamy mashed potatoes come together in this satisfying and flavorful recipe.


Ingredients

800 g (1 lb 12 oz) chuck steak, gravy beef or braising steak, cut into bite-sized pieces

1 tsp salt

½ tsp cracked black pepper

2 tbsp olive oil

1 large onion, roughly diced

1 tsp garlic, freshly minced

400 g (14 oz) mushrooms, sliced

2 tbsp plain (all-purpose) flour

2 tbsp tomato paste

1 tbsp sweet paprika

1 tbsp Worcestershire sauce

1 tsp Dijon mustard

2 cups (500 ml) beef stock

2 tbsp sour cream

1.2 kg (2 lb 10 oz) all-purpose potatoes, peeled and quartered

2 tbsp (40 g) unsalted butter

1 cup (250 ml) milk, slightly warmed

1 tsp salt

Olive oil spray

½ cup (50 g) freshly grated parmesan


Instructions

1. Preheat the oven to 180°C (350°F). Heat olive oil in a large ovenproof skillet or casserole dish over medium-high heat.

2. Add the beef, salt, and pepper. Cook until browned on all sides, then transfer to a plate.

3. In the same skillet, add onion, garlic, and mushrooms. Cook until softened.

4. Stir in flour, tomato paste, paprika, Worcestershire sauce, and mustard. Cook for 1 minute.

5. Gradually stir in beef stock. Return beef to the skillet. Simmer until sauce thickens.

6. In a separate pot, boil potatoes until tender. Mash with butter, milk, and salt.

7. Spread mashed potatoes over the beef mixture. Spray with olive oil and sprinkle with parmesan.

8. Bake for 25-30 minutes, or until golden and bubbling.


Notes

For a time-saving tip, use store-bought mashed potatoes instead of making them from scratch.

– You can add a layer of cooked green peas or carrots between the beef and mashed potatoes for extra flavor and texture.
