Ingredients
For the Beef Filling:
– 1 pound ground beef
– 1 small onion (finely chopped)
– 2 cloves garlic (minced)
– 1 ounce taco seasoning (1 packet or homemade seasoning)
– 1/2 cup water
– 15 ounces black beans (drained and rinsed)
– 1 cup cooked rice
– 1 cup cheddar (shredded, or Monterey Jack cheese)
For the Burritos:
– 4 large flour tortillas
– 1 cup salsa (or pico de gallo)
– 1 cup sour cream
– 1 avocado (sliced)
– Fresh cilantro (chopped for garnish)
– Lime wedges (for serving)
Instructions
1. In a large skillet, cook the ground beef, onion, and garlic until the beef is browned and the onion is translucent.
2. Add the taco seasoning and water, stirring to combine. Cook for a few minutes until the mixture thickens.
3. Stir in the black beans, cooked rice, and cheese until the cheese is melted.
4. To assemble the burritos, place a portion of the beef filling onto a tortilla, top with salsa, sour cream, avocado, and cilantro. Roll up the tortilla tightly.
5. Serve the burritos with lime wedges on the side.
