  •  6 large Flour tortillas
  •  1 pound Ground beef
  •  1 cup Water to add to cooked and seasoned beef
  •  2 cups Cheese, shredded
  •  1 can Refried pinto beans
  •  2 cups Vegetable oil to fry chimichangas
  •  Seasoning for ground beef
  •  1 tablespoon Chili powder
  •  1/2 tablespoon Seasoned salt
  •  1/2 tablespoon Ground cumin
  •  1 teaspoon Black pepper
  •  1 teaspoon Garlic salt or garlic powder
  •  1/2 teaspoon dried Oregano
  •  1/2-1 cup Water
  •  Topping Ideas
  •  Sour cream
  •  Shredded lettuce
  •  Salsa
  •  Chopped tomatoes

  1.  Brown the ground beef in a skillet over medium heat. The meat is fully cooked when there is no longer any pink visible. Use a strainer to drain any excess grease from the skillet.
  2.  Put the meat back into the skillet over medium heat. Add all of the seasonings, and water and mix it together thoroughly. Continue to simmer until the water is absorbed.
  3.  Heat the vegetable oil in a separate skillet over medium heat. While the oil is heating up, begin assembling the burritos.
  4.  Place about one tablespoon of beans on one side of the tortilla and smear it across, somewhat close to the edge. Next place one to two tablespoons of the meat mixture, then a sprinkle of cheese a generous sprinkle!
  5.  Begin to roll the tortilla up over the mixture, once half way rolled, fold in the sides towards the middle, then continue rolling all the way until it is closed. Roll as tight as possible so that the mixture does not ooze out.
  6.  Continue rolling until all of the burritos are made or you run out of mixture.
  7.  Place the burritos into the hot oil SEAM SIDE DOWN. Fry on each side for one to two minutes, or until they turn golden brown. Be sure to flip, and fry the sides of the burritos as well,
  8.  Remove from the oil and drain on a baking sheet or a bed of paper towels. Top with your favorite garnishes and salsas. Enjoy!

Serving Tips:

  1. Top with Toppings: Before serving, garnish your Beef and Cheese Chimichangas with your favorite toppings to enhance their flavor and presentation. Popular options include salsa, sour cream, guacamole, chopped tomatoes, diced onions, sliced jalapeños, and fresh cilantro. These toppings add freshness and variety to the dish, allowing you to customize each chimichanga according to your taste preferences.
  2. Serve with Sides: Pair your Beef and Cheese Chimichangas with complementary side dishes to create a well-rounded meal. Traditional accompaniments include Spanish rice, refried beans, corn salad, or a crisp green salad with a tangy vinaigrette. These sides balance the richness of the chimichangas and provide a satisfying dining experience.
  3. Cut Before Serving: For easier handling and sharing, consider cutting the Beef and Cheese Chimichangas in half or into smaller portions before serving. This allows guests to enjoy the chimichangas without the need for utensils and encourages a communal dining experience, especially at parties or gatherings.
  4. Keep Warm: If serving the chimichangas buffet-style or at a party, keep them warm by placing them on a baking sheet in a low oven (around 200°F or 95°C) until ready to serve. Cover the chimichangas loosely with aluminum foil to prevent them from drying out while they stay warm.
  5. Garnish Creatively: Get creative with garnishes to elevate the presentation of your Beef and Cheese Chimichangas. Consider drizzling salsa or sour cream in decorative patterns over the chimichangas or sprinkling them with chopped herbs like cilantro or green onions for a pop of color and freshness.

Storage Tips:

  1. Refrigerate Leftovers Promptly: If you have leftover Beef and Cheese Chimichangas, store them in an airtight container or wrapped tightly in aluminum foil and refrigerate them promptly. Proper refrigeration helps maintain their freshness and prevents spoilage.
  2. Consume Within 3-4 Days: Beef and Cheese Chimichangas can typically be stored in the refrigerator for up to 3-4 days. Enjoy them as leftovers for quick and convenient meals throughout the week.
  3. Reheat in Oven or Air Fryer: When ready to enjoy leftover chimichangas, reheat them in a preheated oven or air fryer to maintain their crispiness. Place them on a baking sheet and heat them at 350°F (175°C) for 10-15 minutes or until heated through and crispy.
  4. Avoid Microwaving for Extended Periods: While microwaving is a quick way to reheat chimichangas, it can result in a soggy texture. If using the microwave, reheat the chimichangas in short intervals and check for doneness to prevent them from becoming too soft.
  5. Freeze for Future Use: If you have leftover chimichangas that you won’t consume within a few days, consider freezing them for future enjoyment. Wrap each chimichanga individually in plastic wrap and aluminum foil, then place them in a freezer-safe bag or container. Frozen chimichangas can be stored for up to 2-3 months. To reheat, thaw them overnight in the refrigerator before reheating in the oven or air fryer until heated through.
