For the Pizza Dough (or use store-bought):
- 2 1/2 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 1 tsp sugar
- 1 tsp salt
- 3/4 cup warm water
- 2 tbsp olive oil
For the Toppings:
- 1/2 cup barbecue sauce (plus extra for drizzling)
- 1 1/2 cups cooked chicken breast, shredded
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh cilantro leaves, chopped
Instructions
- Prepare the Dough (Skip if using store-bought):
- In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for 5-10 minutes until frothy.
- Add olive oil, salt, and flour. Mix until a dough forms, then knead for 8-10 minutes until smooth. Cover and let rise in a warm place for 1 hour or until doubled in size.
- Preheat Oven:
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
- Assemble the Pizza:
- Roll out the dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet or pizza peel if using a stone.
- Spread barbecue sauce evenly over the dough, leaving a small border for the crust.
- Sprinkle half the mozzarella and cheddar cheese over the sauce.
- Evenly distribute the shredded chicken and red onion slices.
- Top with the remaining cheese.
- Bake:
- Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
- Add Cilantro and Serve:
- Remove the pizza from the oven and immediately sprinkle fresh cilantro on top. Drizzle with additional barbecue sauce if desired. Slice and serve warm.
