Ingredients

Units Scale

For the Pizza Dough (or use store-bought):

  • 2 1/2 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 3/4 cup warm water
  • 2 tbsp olive oil

For the Toppings:

  • 1/2 cup barbecue sauce (plus extra for drizzling)
  • 1 1/2 cups cooked chicken breast, shredded
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh cilantro leaves, chopped

Instructions

  1. Prepare the Dough (Skip if using store-bought):
    1. In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for 5-10 minutes until frothy.
    2. Add olive oil, salt, and flour. Mix until a dough forms, then knead for 8-10 minutes until smooth. Cover and let rise in a warm place for 1 hour or until doubled in size.
  2. Preheat Oven:
    1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
  3. Assemble the Pizza:
    1. Roll out the dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet or pizza peel if using a stone.
    2. Spread barbecue sauce evenly over the dough, leaving a small border for the crust.
    3. Sprinkle half the mozzarella and cheddar cheese over the sauce.
    4. Evenly distribute the shredded chicken and red onion slices.
    5. Top with the remaining cheese.
  4. Bake:
    1. Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
  5. Add Cilantro and Serve:
    1. Remove the pizza from the oven and immediately sprinkle fresh cilantro on top. Drizzle with additional barbecue sauce if desired. Slice and serve warm.

Notes

  • Use rotisserie chicken for a quicker prep time.
  • For a smoky flavor, try a hickory or mesquite barbecue sauce.
  • Add a pinch of red pepper flakes for some heat!
