Description

This Basque Cheesecake is a creamy and indulgent dessert with a caramelized top. It’s easy to make and perfect for any special occasion.

  • 750 g cream cheese blocks, room temperature
  • 1 cup caster sugar
  • 1 1/4 cups whipping cream
  • 1/4 cup flour
  • 1 tsp vanilla bean extract
  • 3/4 cups + 1 tbsp lightly whisked eggs

Instructions

  1. Preheat the oven: Preheat the oven to 200°C fan/220°C/430°F.
  2. Mix ingredients: In a bowl, mix cream cheese and sugar until smooth. Add cream, flour, vanilla, and eggs. Mix until combined.
  3. Bake: Pour mixture into a lined cake tin. Bake for 50-60 minutes until the top is dark golden brown and center slightly jiggles.
  4. Cool: Allow to cool in the tin, then refrigerate before serving.
