Description

This Baked Parmesan Ritz Chicken recipe features tender boneless, skinless chicken breasts coated in a flavorful mixture of Ritz cracker crumbs, garlic salt, seasoned salt, parsley flakes, and Parmesan cheese. The chicken is coated with Greek yogurt to keep it moist and help the crumb mixture adhere perfectly. Topped with slices of butter and baked until golden and crispy, this dish is both easy to prepare and delicious, ideal for a comforting weeknight dinner or a gathering with family and friends.

Ingredients

Scale

Chicken and Coating

  • 8 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 2 cups Ritz cracker crumbs or other buttery cracker crumbs
  • 1 teaspoon garlic salt
  • 1 teaspoon seasoned salt
  • 1 teaspoon parsley flakes
  • 3 tablespoons grated Parmesan cheese

Topping

  • 1/4 cup butter (sliced into 16 pieces)
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon fresh parsley, chopped

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C). Spray a 9” x 13” baking dish with non-stick baking spray to prevent sticking.
  2. Make Coating Mixture: In a shallow dish, combine the Ritz cracker crumbs, garlic salt, seasoned salt, parsley flakes, and 3 tablespoons grated Parmesan cheese. Mix well for an even seasoning blend.
  3. Coat Chicken: Coat each chicken breast thoroughly with plain Greek yogurt on both sides. Roll each piece in the cracker crumb mixture until fully coated. Arrange the coated chicken breasts in a single layer in the prepared baking dish.
  4. Add Butter Slices: Slice the 1/4 cup butter into 16 equal pieces. Place two slices of butter on top of each coated chicken breast to add moisture and richness during baking.
  5. Bake the Chicken: Bake uncovered for 45 minutes. After 30 minutes, check the chicken; if it is browning too quickly, cover loosely with aluminum foil for the remaining baking time to prevent burning while allowing it to cook through.
  6. Optional Garnish and Serve: If desired, sprinkle additional grated Parmesan cheese and chopped fresh parsley over the chicken before serving to enhance flavor and presentation.

Notes

  • Monitor the chicken after 30 minutes to prevent over-browning.
  • Greek yogurt helps keep the chicken moist and helps the coating stick well.
  • Ritz crackers provide a buttery, crispy texture that enhances the dish.
  • Butter slices on top create richness and a golden crust.
  • This recipe can be easily doubled for larger gatherings.
  • Optional garnishes add a fresh, cheesy finish but can be omitted if preferred.
