Instructions
- In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of mini muffin tins, creating a crust. Set aside.
- In another bowl, beat the softened cream cheese, powdered sugar, Baileys Irish Cream, and vanilla extract until smooth and creamy.
- Spoon the cream cheese mixture onto the prepared graham cracker crusts, filling each cup about 3/4 full.
- Refrigerate for at least 2 hours, or until the cheesecake bites are firm.
