Scale
- 2 tablespoons vegetable oil or lard
- 1 large onion, finely chopped
- 2 pounds bone-in chicken pieces (thighs and drumsticks)
- 2 tablespoons sweet Hungarian paprika
- 1 teaspoon smoked paprika (optional for extra depth)
- 2 cups chicken broth
- 1 cup sour cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Heat oil or lard in a large skillet over medium heat. Add onions and sauté until golden and softened.
- Season the chicken with salt and pepper, then add it to the skillet. Brown the chicken on all sides, about 6–8 minutes.
- Reduce the heat to low. Sprinkle sweet paprika and smoked paprika over the chicken and stir to coat, ensuring the paprika doesn’t burn.
- Pour in the chicken broth, cover, and simmer for 30–35 minutes, or until the chicken is cooked through and tender.
- In a small bowl, whisk the sour cream with the flour until smooth. Gradually stir the mixture into the skillet. Cook uncovered for another 5–7 minutes, allowing the sauce to thicken. Adjust seasoning if needed.
- Garnish with fresh parsley and serve hot.
Notes
- Use high-quality Hungarian paprika for an authentic flavor.
- Avoid boiling the sauce after adding sour cream to prevent curdling.
