Description

Apple Fritter Muffins are the perfect blend of moist, fluffy muffins and the sweet, warm flavors of apple fritters. With cinnamon-spiced apples folded into a tender batter and a drizzle of glaze on top, these muffins make for a cozy breakfast or snack.

Ingredients

Units Scale

For the Muffins:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup peeled and chopped apples (Granny Smith recommended)

For the Glaze:

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon milk

Instructions

Step 1: Preheat and Prep
Preheat oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.

Step 2: Make the Muffin Batter
In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt, and brown sugar. In another bowl, mix melted butter, milk, vanilla extract, and egg. Gradually combine wet and dry ingredients, stirring until just mixed. Fold in chopped apples.

Step 3: Fill the Muffin Tin
Divide the batter evenly into the muffin cups, filling each about ¾ full.

Step 4: Bake the Muffins
Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean. Let muffins cool in the pan for 5 minutes before transferring to a wire rack.

Step 5: Make the Glaze
In a small bowl, whisk powdered sugar, vanilla extract, and milk until smooth. Drizzle over cooled muffins.

Step 6: Serve
Enjoy warm for the best texture and flavor.

Notes

  • Don’t overmix: Stir until just combined to keep the muffins light and fluffy.
  • Use cold butter for a richer texture: Instead of melted butter, try using cubed cold butter for more texture.
  • Glaze right before serving: This keeps the muffins fresh and prevents the glaze from soaking in too much
