- Prepare the Cookie Dough: In a mixing bowl, cream the unsalted butter and light brown sugar together until smooth and fluffy. Add the honey and vanilla extract, mixing well. In a separate bowl, combine almond flour, all-purpose flour, and salt, then gradually incorporate the dry ingredients into the wet mixture to form a smooth, slightly sticky dough.
- Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Shape and Bake Cookies: Drop small teaspoons of dough spaced well apart on the prepared baking sheet. The dough will spread thinly; bake for 8-10 minutes or until the edges become golden brown and the cookies appear lacy and crisp.
- Prepare the Chocolate Filling: While the cookies are baking, gently melt the chocolate chips in a heatproof bowl over simmering water (double boiler) or carefully in the microwave in short bursts, stirring until smooth.
