Description

Almond Lace Cookies with Chocolate Filling are delicate, thin cookies made from a buttery almond-flavored dough, baked to a crisp golden lace texture and filled with rich semi-sweet chocolate. These cookies combine the nutty sweetness of almond flour and honey with a luscious chocolate center, perfect for an elegant dessert or a special treat.

Ingredients

Scale

Cookie Dough

  • ½ cup unsalted butter
  • ⅔ cup light brown sugar, packed
  • 1 cup fine almond flour
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract

Filling

  • 1 cup semi-sweet or milk chocolate chips

Instructions

  1. Prepare the Cookie Dough: In a mixing bowl, cream the unsalted butter and light brown sugar together until smooth and fluffy. Add the honey and vanilla extract, mixing well. In a separate bowl, combine almond flour, all-purpose flour, and salt, then gradually incorporate the dry ingredients into the wet mixture to form a smooth, slightly sticky dough.
  2. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  3. Shape and Bake Cookies: Drop small teaspoons of dough spaced well apart on the prepared baking sheet. The dough will spread thinly; bake for 8-10 minutes or until the edges become golden brown and the cookies appear lacy and crisp.
  4. Prepare the Chocolate Filling: While the cookies are baking, gently melt the chocolate chips in a heatproof bowl over simmering water (double boiler) or carefully in the microwave in short bursts, stirring until smooth.
  5. Assemble the Cookies: Allow the baked cookies to cool slightly on the baking sheet for about 5 minutes, then carefully transfer them to a wire rack to cool completely. Once cooled, spread or pipe a small amount of melted chocolate onto the bottom of one cookie and sandwich another cookie on top, gently pressing to spread the filling evenly.
  6. Set and Serve: Place the assembled cookies in the refrigerator for 15-20 minutes to allow the chocolate filling to firm up. Serve at room temperature and store leftovers in an airtight container for up to one week.

Notes

  • You can use either semi-sweet or milk chocolate chips for the filling according to your preference.
  • Be sure to space the cookie dough drops well apart on the baking sheet to allow them to spread into delicate lace patterns.
  • Using fine almond flour ensures a smoother texture in the cookies.
  • Handle the cookies gently when transferring as they are very thin and fragile.
  • For an extra flavor boost, a pinch of cinnamon or a dash of almond extract can be added to the dough.
