- 1½ cups sharp cheddar cheese, shredded
- 1 cup black beans, drained and rinsed
- 1 can (15.25 ounces) sweet corn, drained
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 tablespoons taco seasoning
- 1 cup fresh pico de gallo

Instructions
- Prepare the filling: In a large mixing bowl, combine the shredded rotisserie chicken, cream cheese, sharp cheddar cheese, black beans, sweet corn, diced tomatoes, and taco seasoning. Mix thoroughly until all ingredients are evenly incorporated.
- Assemble the burritos: Lay out a flour tortilla on a clean surface. Spoon a generous amount of the chicken filling onto the center of the tortilla. Add a few spoonfuls of fresh pico de gallo on top of the filling. Carefully roll the tortilla by folding in the sides and rolling tightly from one end to the other to enclose the filling completely.
- Prepare for air frying: Lightly spray the rolled burritos with cooking spray to help them crisp up in the air fryer. This will create a golden, crunchy exterior without using much oil.
- Air fry the burritos: Place the burritos seam side down in the air fryer basket. Set the air fryer to 375°F (190°C) and cook for about 8-10 minutes, flipping halfway through, until the tortillas are golden brown and the filling is heated through.
- Serve and garnish: Remove the burritos carefully from the air fryer. Serve warm with a dollop of sour cream and extra pico de gallo on the side for added flavor and freshness.
