Main Ingredients:
- 6 eggs hard boiled, cooked for 10 minutes, peeled and cut in half
- 2 tablespoons mayo
- 1 tablespoon pickles finely chopped, or use relish
- 1 teaspoon Dijon mustard
- Sea salt & pepper to taste
Breadcrumb Coating:
- 1/2 cup flour
- 2 raw eggs beaten in a mixing bowl
- 1/2 cup bread crumbs
- 1/2 cup butter crackers blended into crumbs
- Oil spray or melted butter for brushing
- Dill for garnish, 100% optional
Instructions
- Prepare the Filling: In a bowl, mix mayo, pickles, mustard, salt, and pepper. Spoon this mixture into the egg halves.
- Coat the Eggs: Dip each filled egg half in flour, then beaten eggs, then a mixture of bread crumbs and cracker crumbs, pressing gently to adhere.
- Air Fry: Preheat the air fryer to 350°F. Place the eggs in a single layer in the air fryer basket and spray with oil. Air fry for about 5-7 minutes until crispy.
- Serve: Garnish with dill if desired and enjoy!
Notes
- If you prefer a smoother filling, you can blend all the ingredients in a food processor.
